Just returned from our month in Thailand and wanted to let you know that all went well. I found the anxiety was pretty much gone as soon as we boarded the plane, though I took Str-J Canada (STR-J USA) for a few days just in case.
I did not have any food problems at all, I took a para-pak each day as well as a probiotic, with some Pepto-Bismol tablets as back-up, and did not eat fresh vegetables, and added in fresh fruits that were peeled during the last half of the trip.
We enjoyed all the great Thai foods, took a cooking class, and ate a lot of food from the street vendors, always checking the food prep areas and/or kitchens and bathrooms!
